I notice the Draytek has the option to back up things like binding list and firewall rules.

By the looks of it, these are a manual task separate from the configuration backup.

Is there a way to do everything at once so that these are not accidentally forgotten or missed when scrolling through looking for items to backup?

As best as I can tell the configuration backup DOES do the whole lot - so just stick with that.
