Interesting one...I found an old Vodafone Sim so gave that a try and I'm now getting 100Mbs+. The O2 mast is about 200m away with a clear line of site and the RSSI is slightly better on O2 (-43dBm vs -57dBm on Voda) so you would assume it would be better. Time to switch network potentially.
PS - both are only showing as connected to a single band in both syslog and telnet "wan lte stus"

How can you be sure it's an O2 mast and that the router is locking onto that particular one?

The O2 coverage checker has an option to show the masts and the mast I can physically see is showing up. I can't be sure I guess that I'm connecting to that specific mast but the signal strength is showing as excellent and -43dBm.
