QOS - does it actually prioritise or just reserve bandwidth?

It did autopopulate the total bandwidth box and tbh I cannot actually see a way to change it - it isn't a box I can even click in, unlike the ones for WANs 2 to 4 (which I don't use). It isn't that far off the real speed, but like you say there is a small difference between the two. Any idea how I can change it?

Don't think you can change it, on some of the firmware versions it was user configurable and others they auto-calculated it, sounds like your's is auto-calculated
