OK, recently changed my kit and got my Sky Q mini and Sky Q Apps all working flawlessly. I currently have the following setup.
Sky Fibre Max --> 2862n (wifi off) --> Google Wifi --> 8 Port switch --> Main Q Hub
My Sky Q main Connects to wired lan via a switch.
My Sky Q mini connects to my wired lan via the same switch
My iPhone and iPad devices can use the Sky Q apps when connected to the Google wifi network.
This setup did not work on Orbi, nor have I tried it with the 2862n wireless, but I don't think wireless N will be suitable for streaming 4k TV plus iPads so I haven't even tried.
I know its not not using the Draytek - but at least it works reliably.

I have a very similar issue, whereby I cannot connect to my regular Sky plus box from the Sky+ app (on my Android) via the wifi on my 2860ac since updating to the latest firmware. Other APs on my LAN are fine.

My thoughts are our two issues surely have the same root cause.
I also logged a support case just now.
